Garlic Chicken


Ingredients:

6 chicken breasts, cut into bite sized pieces
1 egg white
4 green onions, thinly chopped
1 tsp finely chopped ginger
10 cloves of garlic, thinly chopped
1 tblsp cornflour
2 tblsp of cooking oil
1 tsp sesame oil

Ingredients for the sauce:

1 tblsp of sugar
2 tblsp of cornflour
2 tbsp vinegar
1 glass of water
5 tblsp soy sauce
1 tsp of chilli powder

Method:

In a bowl, lightly beat the egg white.
Mix in the cornflour.
Coat the chicken with the cornflour mixture and marinate for 30 minutes.
Combine the sauce ingredients , mix well and set aside.
Heat the oil in a pan.
Add the chicken and fry till the flesh is not pink anymore. Remove the chicken with a perforated spoon and keep aside.
In the same oil, add the onions, ginger and garlic and stir fry for 1/2 a minute
Return the chicken to the pan.
Re stir the sauce ingredients and add to the pan.
Cook, stirring constantly, till the mixture is hot and bubbly and the sauce thickens slightly.
Turn of heat and add the sesame oil.

Coconut Chicken Masala

Ingredients:

3 tbsp groundnut oil
8 chicken pieces, on the bone, such as legs, thighs and wings
2 onions, finely chopped
8 cloves garlic, peeled and chopped
2 tsp cumin powder
½tsp paprica (red chilli powder)
1 tsp ginger paste
½tsp black pepper powder
2 tsp coriander powder
salt
200ml tomato puree
400ml coconut milk
3 bay leaves

Method:

1. Heat the oil in a frying pan, over a medium heat. Add the chicken pieces and brown them lightly on all sides, then remove from the pan and set aside.
2. Turn the heat down a little, add the onions and garlic to the pan and cook gently, stirring frequently, until soft and golden. Add the spices and a good pinch of salt, stir well and cook gently for a minute or two.
3. Pour the tomato puree and coconut milk into the pan and mix well, then return the chicken to the pan, along with the bay leaves. Bring everything to a simmer, cover the pan and cook on a low heat for 50 minutes – 1 hour, stirring from time to time to ensure the sauce doesn’t stick. Check the seasoning, and serve with the naan bread and rice
