Ingredients:
1 kg mutton, cut into cubes
1/2 cup lemon juice
3 medium drumsticks, remove the outer skin and cut into one and half inch long pieces
3 medium sized onions, finely chopped
1 tsp ginger paste
1 tsp garlic paste
4 green chillies pasted, you can add more if you like it hot
1 tsp red chilli pwd
1/2 tsp turmeric pwd
1 tbsp coriander pwd
1 tsp cumin pwd
1 tsp poppy seeds/khus-khus/ghasagase roasted and powdered
3 tbsp oil
5 green cardamom
2 black cardamom
1 2 inh long cinamon
8 cloves
1 star anise
10 gm nutmeg powder
1 glass water
Method:
1. Mix the meat, lemon juice, ginger garlic paste,green chilli paste, red chilli powder, coriander powder, cumin powder and poppy seed pwder.
2. Keep in fridge for marination for 3 hrs.
3. Dry roast the green cardamom, black cardamom, cinamon, cloves, star anise and nutmeg powder, then grind in a mixer and keep aside covered, else the flavour will go.
4. Take 1 tsp oil in a kadhai or frying pan and saute the drumsticks for 2 minutes and keep aside.
Put the remaining oil in the pan. Fry the onions still it is golden brown.
5. Transfer the marinated mutton to the pan and fry for 10 mins stirring occasionaly so that it doesn’t stick at the bottom. You can use little water if required if you find it is sticking.
6. When the masala is nicely fried and a good aroma comes add the water.
7. Transfer it to a pressure cook for 20 mins in medium heat.
8. Re transfer it back to the pan and add the drumsticks and ground masala.
9. Cover it with a lid and cook for another 5 mins.
10. Serve hot with rice.
